Vegan Banana Chocolate Layer cake



Yesterday morning I received a message from a friend that a photo from my blog is being shared by another guy in facebook.
It’s not soo simple. Firstly this guy have copied my photo, secondly he have taken the time and effort to come to my blog, copy my recipe, translate it in Malayalam and post it in his facebook and happily share it and not even a single mention of the source of the image or recipe.Grrrr. Plagiarism at its peak.Whoever did this shameless task should at least have the bare minimum courtesy  to leave a link or even a mention of the source of the image and recipe.
And what did I do : Politely dropped him a personal message, left a comment on his blog. Nothing rude. Just mentioned that it is a copyrighted image/recipe and appreciate if he removed it (See..how nice I am? I myself am impressed by my politenessJ)
Luckily my politeness and patience wasn’t tested for long and peace was restored  .The person apologized and provided a link of my blog as the source for the pic and recipe! 

Fruit and Seed Balls



After the hit of the Fig and Date balls I am on a steady hunt for no bake, no cook easy yet healthy snack.
Why waste time on whipping, mixing and baking when I can make a super easy dessert in less than 30 min which is healthy ,hearty and guilt free too!
I have been trying different combinations of dried fruit, nuts, seeds and flavorings and there is always a box of this super power balls in my refrigerator.
So here is the latest recipe I have tried with one of my fav ingredient, desiccated coconut.

Fig and Date Balls



Eureka! I have found the perfect guilt free snack! And what more ,its eggless, no bake and not even any cooking involved.
And with the added goodness of dates, figs , almonds and Oats!
Me being a sneak, I didn’t tell about the hidden Oats and nuts and gave the Sweet balls to DH who absolutely hates anything with a healthy tag on it!
He thought its some laddu and gorged on it and finished it in no time!
Later in the evening, he was searching the refrigerator for the sweet ballsJ
And he was like, it was soo good and you made such a small batch! And that’s when I reveled the secret ingredientsJ
I told him that in fact it had all his “enemy” stuff in it!
Still he was telling me that Oats and nuts are well hidden and next time I should make a larger batch!

So waste no time in whipping, mixing and baking instead try this Super power Fig and Date balls .
I bet these will satisfy your sweet tooth!


Fig and Date Balls

Ingredients
4 Dried Figs
8-10 Dates
10 almonds
3 tbspn Instant Oats


Directions
In a food processor or Mixer ,powder the oats first and keep aside.No need to make it a fine powder. Just a single pulse will do.
Next pulse the almonds for few seconds.
Now add the chopped dates and figs and pulse for few seconds.
Take the mix out to a plate, the mix will be quite sticky now.
Add the oats and mix well . The oats will absorb any left moisture and the mix will be no longer sticky.
Next , roll one tbpsn each to balls and enjoy the healthy snack

Rose Milk Jelly



Do you have a sweet tooth? If you do, you are going to love this recipe!
This is a simple, eggless, no fuss Jello made with Condensed milkJ
Condensed Milk..Common who doesn’t love this gooey ooey delight!
When we were kids, my mom used to get condensed milk occasionally to add it to Payasams/Kheer
My sis/I would make a big fight with mom and let her use only few spoons for the payasams
And have the rest of the can for us and gorge on that! And we conveniently ignored the payasamJ


Rose Milk Jelly

Ingredients
5 gms China Grass
¼ Cup water
¼ Cup Condensed Milk
½ Cup Milk
1 1/2tbspn Rose Syrup


Directions
Wash the china grass and soak it in water for about 20 minute
After 20 min, heat the water + China grass on low heat.
Stir and cook until it is completely dissolved about 5-10 minutes.
[I was too impatient and the china grass didn’t dissolve completely and you can see the white thingy in my jelloL]
Once it is completely dissolved, add in the milk and condensed milk and bring it to a boil
Add the rose essence and pour into the mould or pan
Let it rest in refrigerator for few hours until it is set well!
I made a topping with 3 tablespoon condensed milk and 2 tspn rose syrup to it to make it even sweeter!


Chocolate Butterscotch Fudge


I have this habit of picking baking ingredients whenever I am travelling.I make it a point to go to local supermarket and dash directly to baking section and pick a few stuff…
So now my grocery cupboard is almost filled with baking stuff and I have pledged not to go to Phoon huat until I finish at least half of it.[Phoon huat is one of the popular shop for baking and confectionery ingredients here in Singapore..]
As I started sorting out the ingredients, I saw two packs of chocolate chips and butterscotch chips ..Almost forgot when and where I picked them..
Hmm..shud I make Chocolate brownies and Butterscotch blondies..???
After pretty long thinking, effort estimation and partner survey I decided to go with a simple recipe where I could use both:-)

Rich, creamy, and decadent, Chocolate Butterscotch fudge !!

This is one of the easiest and simplest fudge recipes I have come across..
My hubby who is a big fudge lover totally adored it….needless to say I loved it too:-)



Here is what you need

1 Cup Semi sweet or Bitter chocolate Chips
1 Cup Butterscotch Chips
1 Cup condensed milk[ I used the low fat condensed milk]
1/ 4 Cup Chopped Pecans
In a pan mix one cup chocolate chips and 1/ 2 cup condensed milk.
Heat it over low heat , stir well until the chocolate is melted.
Add in nuts and give it one more stir.
Now pour the melted chocolate in a square pan lined with parchment paper.
Tilt the pan slightly so that chocolate is evenly spread
Let it rest in refrigerator for 20 min.
Meanwhile mix the butterscotch chips and remaining half cup condensed milk in a pan and melt it over low heat .

Once the chocolate layer is hardened a bit, pour the melted butterscotch and tilt the pan so that it is evenly spread over the chocolate

Let it rest for 4 hours , I chose to let it rest overnight and cut it the following day.
