Who doesn't like the crispy crunchy wafers!!
Now add in the two magic words- Lot fat and healthy ..Doesn’t that sound even more scrumptious?
So here is the recipe for a fruity nutty wafers..
Almond and Cranberry wafers
Adapted from The Australian Women’s Weekly
Ingredients
2 Egg whites
1/3 Cup Caster Sugar
½ Cup All purposed Flour
1 teaspoon Orange rind
½ Cup Almonds
½ Cup dried Cranberries
Pinch of salt
Directions
Preheat the oven to 180 Degrees
Beat the egg white until soft peaks form.
Gradually add in the sugar and continue to beat until sugar is dissolved.
Sift together the flour and salt.
Fold the sifted flour and rind into the egg white mixture.
Finally fold in the nuts and cranberries.
Transfer to a loaf pan and bake for about 30 minutes.
Wrap it in a foil and refrigerate overnight
Preheat the oven to 130 degrees.
Using a serrated knife, cut the loaf into 2-3 mm slice and place it in a baking pan.
Bake for 15-20 minutes until crisp
