“Vegetarian is an old Indian word for bad hunter”..Yes,that
is my DH’s favorite quote, who also happens to be a hard core carnivore. So you
can imagine how our 6 years of marital life would have been. The omnivore me trying to convince the meat lover about the
hazards of being a red meat eater and he in turn persuading me to try all “delicious” stuff.
The other day we went to a Japanese restaurant for dinner
DH: The beef tastes awesome, you should seriously try this!
Me: No way..
DH: The cow will feel bad if we don’t eat it. It’s the cows
destiny to be a good steak one day. So you are not letting the poor animal
fulfill its destiny!
Me: #&!!!! Huh? Ok I better don’t reply to that ..it will be an insult to my intelligenceJ.(I will let my actions
speak). Gives him one tight pinch
DH: OOO! That hurts!!
Me: So a pinch hurts so badly isn’t it? So imagine the pain
the poor animal went through before it became your favorite steak!
DH: Silence ..followed by a big wideJ
So let me stop the husband wife argument story and come back
to today’s recipe, the moist apple cake. Whoever who said Baking is therapeutic
is absolutely right and baking with fresh fruits is even more fun and exciting.
The original recipe called for margarine, as I had some eggs which I want to
use up , I substituted 2 tbspn margarine with 1 egg. So you can go ahead and do
the eggless version with some additional butter/oil/margarine
Moist Apple Cake topped with Pumpkin seeds
Ingredients
2 tbspn Oil
2 tbspn Yogurt
¼ Cup Brown Sugar
1 egg
½ Cup Flour
2 tbspn Instant Oats
¼ tspn Baking powder
½ tspn Baking soda
½ tspn Cinnamon powder
½ Cup grated apple
2 tbspn Pumpkinseeds
Directions
Stir together the dry ingredients, flour, baking powder,
baking soda, oats, Cinnamon powder.
Mix together the wet ingredients, Oil, yogurt, egg. Add the
sugar and beat the wet ingredients until well mixed.
Add the wet ingredients to dry ingredients and mix until just
combined.
Fold in the grated apple and pour into a load pan. Top the
batter with some pumpkin seeds
Bake in a preheated
oven for 30-35 minutes. Let it cool on a wire rack and enjoy the spiced moist
apple cake
